This is such an easy, delicious - and festive - appetizer!
Ingredients
- 1 baguette, sliced
- 1 cup ricotta
- 1/4 cup Meyer Lemon Fused Extra Virgin Olive Oil
- 1 1/2 teaspoons Mediterranean Cyprus Flake Salt
- 2 tablespoons Blueberry Aged Dark Balsamic Vinegar
- 1 cup strawberries, quartered
- 1/2 cup blueberries
- 1/2 cup mint, sliced
Instructions
- Heat the oven to 400 degrees. Place the baguette slices on a sheet pan and brush with 2 tablespoons olive oil. Sprinkle with 1 teaspoon salt and bake for 5 minutes until golden.
- Add the ricotta, 2 tablespoons olive oil, and 1/2 teaspoon salt to a food processor. Blend until smooth.
- Assemble the crostini by adding a layer of the whipped ricotta and topping with strawberries, blueberries, mint and a drizzle of blueberry balsamic vinegar.
