This is a quick and delicious salad that is a picnic MVP!
Ingredients

2 cans black eyed peas, drained and rinsed

1 red bell pepper, diced

1 jalapeno, diced

1/2 red onion, diced

1/4 cup parsley

1/4 cup red wine vinegar

1/4 cup Koroneiki olive oil

2 teaspoons salt

1 teaspoon pepper
Instructions

Add the black eyed peas, red bell pepper, jalapeno, and red onion to a bowl.

Mix together the vinegar, olive oil, salt, pepper and parsley.

Toss the dressing in the bean salad and enjoy.
