Blood Orange Olive Oil Snacking Cake

Everybody is happier with a snacking cake! This is a delicious olive oil cake made with blood orange olive oil and swirled with jam. 

Ingredients

Instructions

  1. Heat the oven to 350 degrees.
  2. In a large bowl, add the olive oil, yogurt, sugars, vanilla extract, and eggs. Mix well to combine.  Add the flour, salt, baking powder, and baking soda and mix well.
  3. Line a 9-inch square baking pan with parchment paper. Pour the batter into the pan. Add spoonfuls of the jam on top of the batter and use a knife to swirl the jam into the batter. 
  4. Bake for 45 minutes. Let cool completely, dust with maple sugar, slice and serve.

Takes 1 hour
