Everybody is happier with a snacking cake! This is a delicious olive oil cake made with blood orange olive oil and swirled with jam.
Ingredients
- 1 cup Blood Orange Olive Oil
- 1 cup Greek yogurt
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 teaspoon Madagascar Bourbon Vanilla Extract
- 2 eggs
- 2 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup jam (I like Triple Berry Jam)
- 1 teaspoon Maple Sugar
Instructions
- Heat the oven to 350 degrees.
- In a large bowl, add the olive oil, yogurt, sugars, vanilla extract, and eggs. Mix well to combine. Add the flour, salt, baking powder, and baking soda and mix well.
- Line a 9-inch square baking pan with parchment paper. Pour the batter into the pan. Add spoonfuls of the jam on top of the batter and use a knife to swirl the jam into the batter.
- Bake for 45 minutes. Let cool completely, dust with maple sugar, slice and serve.
