This one pan dinner comes together in under 30 minutes with a combination of chorizo, onion, garlic, tomato and shrimp and plenty of flavorful broth to sop up with crusty bread.
Ingredients

1 yellow onion, diced

3 cloves garlic, grated

1 tablespoon tomato paste

1 pound ground chorizo

1 pound jumbo shrimp, peeled and deveined

1 14 ounce can diced tomatoes

1/2 cup chicken stock

1/2 cup white wine, optional

1/4 cup parsley, chopped
- 2 tablespoons Garlic Olive Oil

1 teaspoon salt

1/2 teaspoon pepper
Instructions

Place shrimp in bowl with garlic, salt and pepper

Heat oil in a skillet at medium heat and brown the chorizo

Add onions, season with salt and pepper and cook until soft about 5 minute. Add wine and reduce slightly then add tomatoes and chicken stock. Bring to a simmer.

Add the shrimp and cook through, about 2 minutes.

Top juice of 1/2 lemon and parsley. Serve with remaining lemon and crusty bread.
