These are packed with flavor from heat of chipotle, sweetness from honey and a beer braise.
Ingredients
- 2 pounds beef chuck roast
- 2 tablespoons Applewood Chipotle Rub
- 1 can chipotles in adobo
- 1 bottle dark beer
- 1 tablespoon honey
- 2 tablespoons Sonoran Extra Virgin Olive Oil
- 1 Bay Leaf
- Tortillas, crema, salsa, limes, and cilantro for serving
Instructions
- Heat the oven to 300 degrees.
- Rub the beef all over the with Applewood Chipotle Rub.
- Heat the olive oil in a large dutch oven over medium high heat. Sear the beef for about 3 minutes per side. Add the chipotles in adobo sauce, honey, beer and bay leaf.
- Cover and transfer to the oven. Cook for 3-4 hours until tender.
- Once the beef is tender, remove from the oven. Remove the bay leaf and shred the beef in the dutch oven. Place on the stove over medium high heat and simmer until the sauce is slightly reduced and the beef starts to crisp up.
- Serve the beef in a tortilla shell with crema, salsa, lime and cilantro - or toppings of choice.
Note: This also makes a great slow cooker meal. Add all the ingredients to a slow cook and cook on low for 10 hours.
