This pork tenderloin is coated with a spice rub and served over rice with cilantro and lime.
Ingredients

1 pork tenderloin
- 2 tablespoons Barbecue Dust
- 2 tablespoons Jalapeno olive oil

1 cup rice, cooked

1/2 cup cilantro, chopped

1 lime, juiced
Instructions

Heat oven to 400 degrees. Rub the barbecue dust all over the pork.

Heat olive oil in a large ovenproof skillet over medium heat. Sear the pork on all sides then transfer the oven for about 10 minutes until cooked to an internal temp of 145 degrees.

Meanwhile cook the rice by bringing a pot of salted water to a boil. Add the rice and cook until tender. Drain the rice and mix in the cilantro and lime juice.

Slice the pork and serve over the cilantro lime rice.
