These are a family favorite - super flavorful chicken folded in a tortilla shell with lots of cheese and baked until crispy.
Ingredients
- 1 pound chicken tenderloins
- 1 tablespoon Spicy Mango Dark Balsamic Vinegar
- 2 tablespoons Jalapeno Fused Extra Virgin Olive Oil
- 1 tablespoon Chile Lime Rub
- 2 cups Monterey Jack cheese, shredded
- 8 small flour tortillas
- cilantro, lime and avocado for serving (or your favorite toppings)
Instructions
- Heat the oven to 425 degrees.
- Add the chicken to a bowl and toss with the spicy mango balsamic vinegar, 1 tablespoon of the jalapeno olive oil and the chile lime rub.
- Heat a skillet over medium high heat and add the chicken. Cook for about 3 minutes per side until just cooked through. Remove the chicken from the skillet and let rest for 5 minutes. Once the chicken is rested, chopped it up into small pieces.
- Brush the tortilla shells with the remaining tablespoon of jalapeno olive oil. Add some of the chopped up chicken to each tortilla shell, then top with cheese, fold and top with more cheese. Bake for 10 minutes until the cheese is melted and the shells are crispy.
- Serve with avocado, cilantro, and lime (or your favorite toppings).
