These short ribs are marinated in chipotles, grilled low and slow, and topped with a spicy chipotle sauce - so good!
Ingredients
-
1 can chipotle chiles in adobo
-
1/4 cup lime juice
-
4 cloves garlic
-
1 white onion, peeled and quartered
-
1/4 cup Mission Trail Olive Oil
-
1/4 cup cilantro
-
1/2 cup honey
-
4 pounds bone-in short ribs
Instructions
-
In a food processor mix together the chipotles, lime juice, garlic, onion, olive oil and cilantro. Pulse until smooth.
-
Take out 1/2 cup of the sauce and set the rest aside.
-
Season the short ribs with salt and pepper then rub 1/2 cup of marinade all over. Marinade for 2 hours or overnight.
-
Heat the grill (or oven) to 200 degrees. Grill the short ribs for 2 hours then increase the heat to 250 degrees. Wrap the ribs in two layers of foil and grill for until 2 hours until tender.
-
While the ribs cook, heat the remaining sauce and honey over medium low heat until slightly thickened and set aside.
-
When the ribs are tender remove from the foil and serve with the sauce on top or on the side (careful it’s spicy!)
Note: Save the leftovers for tacos!
