Ingredients
Pumpkin Bars
- 4 eggs
- 1 cup Koroneiki Greek Extra Virgin Olive Oil
- 2 cups sugar
- 1 15 oz can pumpkin puree
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 tablespoon Pumpkin Spice
- 1 teaspoon salt
Frosting
- 6 ounces cream cheese, at room temperature
- 1 stick butter, at room temperature
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
Instructions
- Preheat oven to 350 degrees
- Mix the eggs, olive oil, sugar and pumpkin in a large bowl. Add the flour, baking powder, baking soda, salt and pumpkin spice and mix well.
- Pour into a greased 18x13 sheet pan and bake for 25-30 minutes.
- Make the frosting by beating the cream cheese, butter, milk and vanilla, then add in the powdered sugar until mixed well.
- Frost the pumpkin bars once cooled and enjoy!
