This soup is deeply flavorful and comforting with lots of garlic, paprika, chorizo and potatoes.
Ingredients
- 3 uncured chorizo sausages, chopped
- 1 onion, chopped
- 3 small yukon gold potatoes, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 teaspoons smoked hot paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon Greek oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 quart chicken stock
- 1/4 cup heavy cream
- 2 tablespoons butter
- 1/2 cup parsley, chopped
- 2 tablespoons Arbequina Spanish Extra Virgin Olive Oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chorizo and saute for 2 minutes until seared. Add the onion, garlic, paprika, cumin, oregano and tomato paste and saute for another 5 minutes. Add the potatoes, chicken stock, salt and pepper.
- Bring to a boil, then reduce to a simmer and simmer partially covered for 20 minutes until the potatoes are tender. Stir in the cream, butter and parsley.
