Coriander Crusted Tenderloin

Crushed coriander and pepper gives this simply grilled beef tenderloin great flavor. I like to serve these with Sesame Sprouts.

  • 4 6-8 ounce beef tenderloin fillets

  • 1 tablespoon whole coriander

  • 1 tablespoon whole peppercorn

  • 1 teaspoon salt

  • 2 tablespoons olive oil

  1. Preheat grill to 500 degrees.

  2. Crush the coriander and peppercorns in a mortar and pestle. Mix with the olive oil and coat top and bottom of the steak with the mixture.

  3. Grill the steaks for 6 minutes per side for medium rare (or until cooked to desired temperature).

  4. Once cooked, cover loosely with foil and rest the steak for 10 minutes

Note: If you don’t have a mortar and pestle you can toss the whole spices in a small baggy and crush with a meat mallet or instrument of choice.
