This chicken is marinated in a delicious blend of yogurt, lemon, garlic and herbs and grilled to get beautiful charred bits perfect for wrapping up with tzatziki, lettuce and tomato.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- 2 cups Greek yogurt
- 2 tablespoons Greek Seasoning
- 2 lemons, juiced
- 2 tablespoons Garlic Fused Extra Virgin Olive Oil
- 1 teaspoon pepper
- 1 teaspoon Smoked Sweet Paprika
- 1/2 English cucumber, grated
- 1 clove garlic, grated
- 2 tablespoons dill, chopped
- 1 teaspoon salt
- 1 tomato, sliced
- 2 cups lettuce
- Pita or flatbread for serving
Instructions
- In a large bowl, mix 1 cup of yogurt, Greek seasoning, the juice of 1 lemon, olive oil, pepper and paprika together. Add the chicken and coat. Marinade the chicken for 2 hours or overnight.
- Heat the grill to high. Remove the chicken from the marinade and grill for about 6 minutes per side until cooked through. Set aside and let rest for 10 minutes before slicing.
- While the chicken grills make the tzatziki by mixing the remaining 1 cup of Greek yogurt with the juice of 1 lemon, grated cucumber, grated garlic, dill and salt.
- Slice the chicken into thin strips and serve with the flatbread, tomato, lettuce and tzatziki.
