Grilled Chicken Gyros - Olive Branch Oil & Spice

This chicken is marinated in a delicious blend of yogurt, lemon, garlic and herbs and grilled to get beautiful charred bits perfect for wrapping up with tzatziki, lettuce and tomato.

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 cups Greek yogurt
  • 2 tablespoons Greek Seasoning
  • 2 lemons, juiced
  • 2 tablespoons Garlic Fused Extra Virgin Olive Oil
  • 1 teaspoon pepper
  • 1 teaspoon Smoked Sweet Paprika
  • 1/2 English cucumber, grated
  • 1 clove garlic, grated
  • 2 tablespoons dill, chopped
  • 1 teaspoon salt
  • 1 tomato, sliced
  • 2 cups lettuce
  • Pita or flatbread for serving

Instructions

  1. In a large bowl, mix 1 cup of yogurt, Greek seasoning, the juice of 1 lemon, olive oil, pepper and paprika together. Add the chicken and coat. Marinade the chicken for 2 hours or overnight. 
  2. Heat the grill to high. Remove the chicken from the marinade and grill for about 6 minutes per side until cooked through. Set aside and let rest for 10 minutes before slicing. 
  3. While the chicken grills make the tzatziki by mixing the remaining 1 cup of Greek yogurt with the juice of 1 lemon, grated cucumber, grated garlic, dill and salt.
  4. Slice the chicken into thin strips and serve with the flatbread, tomato, lettuce and tzatziki.
