Grilled Peach Burrata Chicken - Olive Branch Oil & Spice

Grilled chicken and peaches top with creamy burrata is the perfect summer weeknight meal!

Ingredients

  • 1 pound boneless chicken breasts or thighs
  • 1 peach, pit removed
  • 4 cups arugula
  • 1 roma tomato, chopped
  • 2 balls burrata
  • 1/2 cup Basil Olive Oil
  • 1/4 cup Cucumber Melon Balsamic Vinegar
  • 2 teaspoons dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Heat the grill to high
  2. In a small bowl, mix the oil, vinegar, dijon mustard, salt and pepper.  Remove half of the dressing and coat the chicken on both sides.
  3. Add the chicken to the grill. Flip after 5 minutes and add the peach to the grill flesh side down. Grill for another 5 minutes until the chicken is cooked through. Remove the chicken and peach and set aside.  Once slightly cooled, cut the peach into slices.
  4. Add the arugula and tomato to a bowl and toss with the remaining dressing. 
  5. To serve, add some of the salad to a plate, top with chicken and peaches then add burrata.
