Mediterranean Pasta Salad

This is my favorite pasta salad! It is full of feta, olives, sundried tomatoes and tossed in a creamy Greek vinaigrette. Perfect for a picnic!


  • 1 pound penne
  • 6 ounces feta, crumbled
  • 1 cup olives, chopped 
  • 2 tablespoons capers
  • 1/2 cup sundried tomatoes, sliced
  • 1/2 cup Koroneiki Olive Oil (or any varietal)
  • 1/4 cup red wine vinegar
  • 1 teaspoon Greek Seasoning
  • 1/2 teaspoon pepper
  • 2 tablespoons mayo
  • 1/4 cup fresh herbs, chopped (I like to use parsley and oregano)


  1. Bring a large pot of salted water to a boil and cook the pasta to al dente. Drain and set aside.
  2. In a jar or small bowl, mix the red wine vinegar, olive oil, greek seasoning, pepper, and mayo together to combine.
  3. In a large bowl mix the pasta, dressing, cheese, olives, tomatoes, and herbs.

Makes 4-6 servings

Takes 15 minutes

Store refrigerated for up to a week
