This is my favorite pasta salad! It is full of feta, olives, sundried tomatoes and tossed in a creamy Greek vinaigrette. Perfect for a picnic!
Ingredients
- 1 pound penne
- 6 ounces feta, crumbled
- 1 cup olives, chopped
- 2 tablespoons capers
- 1/2 cup sundried tomatoes, sliced
- 1/2 cup Koroneiki Olive Oil
- 1/4 cup red wine vinegar
- 1 teaspoon Greek Seasoning
- 1/2 teaspoon pepper
- 2 tablespoons mayo
- 1/4 cup fresh herbs, chopped (I like to use parsley and oregano)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta to al dente. Drain and set aside.
- In a jar or small bowl, mix the red wine vinegar, olive oil, greek seasoning, pepper, and mayo together to combine.
- In a large bowl mix the pasta, dressing, cheese, olives, tomatoes, and herbs.

Store refrigerated for up to a week
