Kielbasa, Potatoes and Kale

Don’t let the boring title fool you - this is so good! Kielbasa and potatoes are cooked with lots of garlic and flavorful olive oil then tossed with kale, cheese, and lemon.

Ingredients

  • 1 pound kielbasa, sliced

  • 6 baby potatoes, sliced

  • 4 cloves garlic, minced

  • 1 bunch of kale, chopped

  • 1 cup chicken stock

  • 1/4 cup parmesan

  • 2 tablespoons butter

  • 2 tablespoons Rosemary Olive Oil

  • 1 lemon, cut into wedges

  • 1 teaspoon red pepper flakes

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

Instructions

  1. Heat butter and olive oil in a large skillet over medium heat. Add the kielbasa, potatoes, red pepper flakes, salt and pepper. Cook for 5 minutes.

  2. Add the chicken stock, partially cover and simmer for 10 minutes until the potatoes are tender. Toss in the kale and cook for a couple minutes until just wilted.

  3. Give a good squeeze of lemon and top with parmesan cheese.

Takes 15 minutes
