Don’t let the boring title fool you - this is so good! Kielbasa and potatoes are cooked with lots of garlic and flavorful olive oil then tossed with kale, lemon, and parmesan.
Ingredients
- 1 pound kielbasa, sliced
- 6 baby potatoes, sliced
- 4 cloves garlic, minced
- 1 bunch of kale, chopped
- 1 cup chicken stock
- 1 lemon, juiced
- 1/4 cup parmesan
- 2 tablespoons butter
- 2 tablespoons Rosemary Olive Oil
- 1 teaspoons Spanish Smoked Paprika
- 2 teaspoons Bruschetta Seasoning

Heat butter and olive oil in a large skillet over medium heat. Saute the garlic for 1 minute then add the kielbasa, potatoes, paprika and bruschetta seasoning. Cook for 5 minutes.

Add the chicken stock and lemon juice. Partially cover and simmer for 10 minutes until the potatoes are tender. Toss in the kale and cook for a couple minutes until just wilted.

Stir in the parmesan cheese and enjoy!
