This is a delicious bowl of beef kofta meatballs with a mint tzatziki, fresh cucumber and tomatoes over a bed of couscous.
Ingredients

1 pound ground beef

1 small onion, minced

2 cloves garlic, grated

1 cup parsley, minced

1 slice of bread, soaked in just enough milk to cover

1 teaspoon ground allspice

1/2 teaspoon sumac

1/2 teaspoon ground nutmeg

1/2 teaspoon Hungarian paprika

1 cup greek yogurt
-
1/2 lemon, juiced
-
1/2 cucumber, grated

2 tablespoons dill, chopped

1 tablespoon mint, chopped

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon red pepper flakes

1/4 cup Koroneiki Olive Oil

tomatoes, cucumbers, couscous and pita for serving
Instructions

In a large bowl add the ground beef, onion, garlic, parsley, bread, allspice, sumac, nutmeg and paprika. Mix with your hands until just combined. Form into 2 inch balls. (You can use the food processor for this step and skip all the hand chopping and mixing).

Heat the oil in a large skillet over medium high heat. Add the meatballs in a single layer and cook for about 3 minutes per side, then turn the heat to medium low and partially cover to cook through, another 5 minutes.

While the balls cook make the tzatziki by combining the yogurt, lemon juice, cucumber, dill, mint, salt, pepper and red pepper flakes.

When the meatballs are cooked serve over couscous and top with cucumbers, tomatoes and the tzatziki.
