Mushroom Farro Risotto - Olive Branch Oil & Spice

Mushroom Farro Risotto

Mushrooms and farro cooked risotto style for a rich, delicious meal.

Ingredients

  • 1 cup farro
  • 1 pound cremini mushrooms, sliced 
  • 2 tablespoons Garlic Fused Extra Virgin Olive Oil
  • 2 tablespoons butter
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1 cup parmesan, grated
  • 1/2 cup white wine
  • 4 cups vegetable stock
  • 1 teaspoon Tuscan Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lemon, juiced
  • 1/4 cup parsley, chopped

Instructions

  1. Heat the olive oil and butter in a large pot over medium heat. Add the onion and cook for 5 minutes. Add the garlic and mushrooms and cook for another 5 minutes. Season with Tuscan Seasoning, salt and pepper. Add the farro and stir to coat. Add the wine and cook for 2 minutes until the wine is mostly absorbed.
  2. Add 1/2 cup of stock, stir and simmer until absorbed. Continue adding stock about 1/2 cup at a time and stirring until the farro is cooked through. 
  3. Stir in the parmesan and lemon juice. Top with parsley and enjoy.

Takes 35 minutes

Serves 4-6
