Parmesan Roasted Chicken

Parmesan Roasted Chicken - Olive Branch Oil & Spice

This chicken is perfectly juice, a little lemony, and crusted with parmesan cheese.

Ingredients

  • 4 bone-in skin on chicken breasts (or 2 breasts, 2 thighs)
  • 1 lemon, zested
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons Garlic Olive Oil 
  • 1/2 cup parmesan cheese, grated

Instructions

  1. Mix the lemon zest with salt, pepper, and red pepper flakes. Pat the chicken dry with a paper towel, then rub the salt mixture over it. Let sit at room temperature for 15 - 30 minutes.

  2. Preheat the oven to 425 degrees. Place chicken breast side up on a sheet pan and drizzle with olive oil.

  3. Roast chicken for 20 minutes. Sprinkle all over with parmesan then roast for another 15 to 20 minutes until cooked through.

Takes 60 minutes
