This chicken is perfectly juice, a little lemony, and crusted with parmesan cheese.
Ingredients
- 4 bone-in skin on chicken breasts (or 2 breasts, 2 thighs)
- 1 lemon, zested
- 2 teaspoons salt
- 1 teaspoon pepper
- 1/2 teaspoon red pepper flakes
- 2 tablespoons Garlic Olive Oil
- 1/2 cup parmesan cheese, grated
Instructions

Mix the lemon zest with salt, pepper, and red pepper flakes. Pat the chicken dry with a paper towel, then rub the salt mixture over it. Let sit at room temperature for 15 - 30 minutes.

Preheat the oven to 425 degrees. Place chicken breast side up on a sheet pan and drizzle with olive oil.

Roast chicken for 20 minutes. Sprinkle all over with parmesan then roast for another 15 to 20 minutes until cooked through.
