Pepperoncini Shrimp

Pepperoncini Shrimp - Olive Branch Oil & Spice

This is a fast and flavorful sheet pan dinner with shrimp, lemon pepper, pepperoncini, and tomatoes.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pint grape tomatoes, sliced in half
  • 1/2 cup sliced pepperoncini
  • 2 tablespoons pepperoncini juice
  • 1 tablespoon Lemon Pepper
  • 2 tablespoons Meyer Lemon Olive Oil
  • 1/4 cup white wine
  • 2 tablespoons butter, sliced 
  • 2 tablespoons chopped parsley

Instructions

  1. Heat the oven to 400 degrees
  2. Pat the shrimp dry, place them on a sheet pan and season with lemon pepper. Add the tomatoes and pepperoncini to the sheet pan. Pour the pepperoncini juice and white wine in the pan. Drizzle with olive oil and top with butter.
  3. Roast in the oven for 10 minutes until the shrimp are just cooked through.
  4. Top with parsley and serve with crusty bread or pasta.
