This middle eastern inspired chicken is spiced with sumac, allspice, and cumin, smoked and served with schug (aka Magic Green Sauce).
Ingredients
- 1 whole chicken, cut into 4 pieces
- 1 teaspoon ground cumin
- 1 teaspoon sumac
- 1 teaspoon ground allspice
- 1/2 cup Koroneiki olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup Schug
- Pita bread for serving
Instructions
- Heat the smoker, grill or oven to 425 degrees.
- Coat the chicken with olive oil, spices, salt and pepper.
- Cook for 45 minutes breast side up until the internal temp is 160 degrees.
- Rest for 15 minutes before serving.
- Serve with schug, warm pita and any other condiments you love.
