Spring Vegetable Frittata

This frittata is a delicious way to celebrate your favorite spring vegetables! 

Ingredients

  • 8 eggs
  • 1/4 cup heavy cream
  • 1 bunch asparagus, trimmed and cut into 1 inch pieces
  • 1/2 cup frozen peas
  • 8 ounces feta, crumbled
  • 2 shallots, minced
  • 2 tablespoons Mediterranean Medley Olive Oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped parsley
  • 2 tablespoons chopped mint

Instructions

  1. Heat oven to 400 degrees
  2. Add oil to an ovenproof skillet over medium heat. Add the shallot and asparagus and saute for 3 minutes.
  3. In a bowl, whisk the eggs, cream, herbs, feta, peas, salt and pepper.  Pour into the skillet and transfer to the oven.
  4. Bake for 15-20 minutes until cooked through. Slice and enjoy!
