This frittata is a delicious way to celebrate your favorite spring vegetables!
Ingredients
- 8 eggs
- 1/4 cup heavy cream
- 1 bunch asparagus, trimmed and cut into 1 inch pieces
- 1/2 cup frozen peas
- 8 ounces feta, crumbled
- 2 shallots, minced
- 2 tablespoons Mediterranean Medley Olive Oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup chopped parsley
- 2 tablespoons chopped mint
Instructions
- Heat oven to 400 degrees
- Add oil to an ovenproof skillet over medium heat. Add the shallot and asparagus and saute for 3 minutes.
- In a bowl, whisk the eggs, cream, herbs, feta, peas, salt and pepper. Pour into the skillet and transfer to the oven.
- Bake for 15-20 minutes until cooked through. Slice and enjoy!
