Steak Taco Salad

Steak Taco Salad - Olive Branch Oil & Spice

Grilled spiced steak over a salad with black beans, tomatoes, avocado and jalapeno. 

Ingredients

  • 1 pound flank steak (or cut of choice)
  • 1 tablespoon Steak Rub
  • 1 can black beans, drained and rinsed
  • 1 pint grape tomatoes, halved
  • 1/2 cup chopped cilantro
  • 2 avocados, diced
  • 1 jalapeno, thinly sliced
  • 2 hearts of romain, chopped
  • 1/2 cup pumpkin seeds
  • 1/2 cup Jalapeno Olive Oil
  • 2 limes, juiced
  • 1/4 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Heat the grill to high (450 degrees)
  2. Rub the steak with the Steak Rub seasoning
  3. Grill the steak for 5 minutes per side, remove and set aside to rest
  4. While the steak grills, add the jalapeno olive oil, lime juice, sour cream, salt and pepper to a salad bowl. Whisk to combine then stir in the black beans, tomatoes, cilantro, avocado, and jalapeno. Add the lettuce and toss to coat. 
  5. Slice the steak and place over the salad. Top with pumpkin seeds.

Takes 20 minutes
