Grilled spiced steak over a salad with black beans, tomatoes, avocado and jalapeno.
Ingredients
- 1 pound flank steak (or cut of choice)
- 1 tablespoon Steak Rub
- 1 can black beans, drained and rinsed
- 1 pint grape tomatoes, halved
- 1/2 cup chopped cilantro
- 2 avocados, diced
- 1 jalapeno, thinly sliced
- 2 hearts of romain, chopped
- 1/2 cup pumpkin seeds
- 1/2 cup Jalapeno Olive Oil
- 2 limes, juiced
- 1/4 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Heat the grill to high (450 degrees)
- Rub the steak with the Steak Rub seasoning
- Grill the steak for 5 minutes per side, remove and set aside to rest
- While the steak grills, add the jalapeno olive oil, lime juice, sour cream, salt and pepper to a salad bowl. Whisk to combine then stir in the black beans, tomatoes, cilantro, avocado, and jalapeno. Add the lettuce and toss to coat.
- Slice the steak and place over the salad. Top with pumpkin seeds.
