These ribs are marinated in soy, ginger, and sambal and glazed with a sticky hoisin honey sauce.
Ingredients
- 1 slab baby back ribs
- 1/4 cup soy sauce
- 4 tablespoons rice vinegar
- 2 tablespoons Habanero Fused Extra Virgin Olive Oil
- 2 tablespoons brown sugar
- 3 garlic cloves, grated
- 1 tablespoon ginger, grated
- 1 tablespoon sambal oelek (or sriracha)
- 1 tablespoon salt
- 1/2 cup hoisin sauce
- 2 tablespoons honey
- 1 lime, wedged
- 1/4 cup cilantro, roughly chopped
Instructions

In a small bowl mix the soy sauce, 2 tablespoons rice vinegar, oil, brown sugar, garlic, ginger, sambal and salt together. Pour over ribs, cover and marinade overnight.

Heat the grill (or oven) to 225 degrees. Place the ribs bone side down and cook for 2 hours.

Meanwhile make the glaze by mixing the hoisin, honey and remaining 2 tablespoons rice vinegar in a small pot. Heat over medium heat for a few minutes until slightly thickened.

Increase the grill to 375. Take the ribs off the grill and coat with the glaze. Wrap the ribs in 2 layers of foil and cook for another hour.

Cut the ribs, add drizzle with the rest of the glaze, top with cilantro and serve with lime.
Takes 3 hours (+ marinate overnight)
