This is a delicious one pan roasted chicken with delicata squash that is spiced with our house Za'atar seasoning.
Ingredients
- 1 whole chicken, cut into quarters
- 1/3 cup Koroneiki Greek Extra Virgin Olive Oil
- 2 tablespoons Za'atar
- 2 lemons, 1 juiced and 1 cut into wedges
- 3 delicata squash
- 2 tablespoons Meyer Lemon Olive Oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons chopped parsley
Instructions
- In a large bowl, mix the Greek Olive Oil, Za'atar, and lemon juice together. Add the chicken, cover and marinate for 2 hours.
- Heat the oven to 425 degrees.
- Cut the delicata squash lengthwise, remove the seeds and cut crosswise into moons. Place the squash in a roasting pan and toss with the Meyer Lemon Olive Oil, salt and pepper.
- Place the chicken over the squash and transfer to the oven to roast for about 45 minutes until the chicken reaches an internal temperature of 165 degrees. Rest for 5-10 minutes before serving.
- Top with parsley and serve with the lemon wedges.
