This is a delicious pasta dish that is inspired by Stanley Tucci's favorite pasta - Spaghetti alla Nero. It is slightly simplified from the traditional version with olive oil fried zucchini and lots of parmesan.
Ingredients
- 1 pound spaghetti
- 3 medium zucchini, sliced thin
- 1 cup Nocellara del Belice Italian Extra Virgin Olive Oil
- 2 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 2 teaspoons salt
- 14 cup basil leaves
Instructions
- Bring a large salted pot of water to a boil and cook to al dente.
- While the pasta cooks, add the olive oil to a large skillet until it is about 1/4 inch high. Heat over medium high.
- Once the oil is hot, add the zucchini in a single layer and cook for 2 minutes per side. Remove and set on a towel lined baking sheet and sprinkle with salt. Repeat in batches until all the zucchini are cooked.
- Drain the excess oil, leaving about 1 tablespoon in the skillet. Add the garlic and saute for 1 minute. Return the zucchini back to the skillet.
- Once the pasta is cooked, add 1/2 cup pasta water to the skillet. Drain the pasta and add to the skillet along with the parmesan and basil. Toss to combine and enjoy!
