Spicy, sweet and delicious pork skewers with pineapple, red bell peppers, and red onion.
Ingredients
- 2 pounds pork tenderloin, trimmed and cut into bit sized pieces
- 2 tablespoons Jamaican Jerk
- 1/4 cup + 2 tablespoons Arbequina Spanish Extra Virgin Olive Oil
- 1 red bell pepper, cut into bite sized pieces
- 1/2 pineapple, peeled, cored and cut into bite sized pieces
- 1 red onion, cut into bite sized pieces
- 1 teaspoon salt
Instructions
- Whisk the jerk seasoning and 1/4 cup olive oil together to form a paste. Coat the pork with the seasoning and marinate for at least 30 minutes, up to overnight.
- Toss the chunks of pineapple, onion, and bell pepper with 2 tablespoons of olive oil and 1 teaspoon of salt.
- Soak 8 bamboo skewers in water for at least 30 minutes then add the pork, pineapple, red bell pepper and red onion to the skewers.
- Heat the grill to high heat.
- Grill the skewers for 6 minutes per side and enjoy!
