Pork and Pineapple Skewers

Spicy, sweet and delicious pork skewers with pineapple, red bell peppers, and red onion.

Ingredients

  • 2 pounds pork tenderloin, trimmed and cut into bit sized pieces
  • 2 tablespoons Jamaican Jerk
  • 1/4 cup + 2 tablespoons Arbequina Spanish Extra Virgin Olive Oil
  • 1 red bell pepper, cut into bite sized pieces
  • 1/2 pineapple, peeled, cored and cut into bite sized pieces
  • 1 red onion, cut into bite sized pieces
  • 1 teaspoon salt

Instructions

  1. Whisk the jerk seasoning and 1/4 cup olive oil together to form a paste. Coat the pork with the seasoning and marinate for at least 30 minutes, up to overnight.  
  2. Toss the chunks of pineapple, onion, and bell pepper with 2 tablespoons of olive oil and 1 teaspoon of salt.
  3. Soak 8 bamboo skewers in water for at least 30 minutes then add the pork, pineapple, red bell pepper and red onion to the skewers. 
  4. Heat the grill to high heat.
  5. Grill the skewers for 6 minutes per side and enjoy!
