Crispy chicken cutlets topped with marinara, parmesan and mozzarella - so good!
Ingredients
- 4 boneless skinless chicken breasts
- 1 cup flour
- 2 eggs, beaten
- 1 cup Panko bread crumbs
- 1/4 cup Nocellara del Belice Extra Virgin Olive Oil
- 1 cup Simple Tomato Sauce, or store bought marinara
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup parmesan cheese, grated
- 1 cup mozzarella, shredded
Instructions

Heat the oven to 400 degrees.

Pound the chicken breasts until they are about 1/4 inch thick.

Heat oil in a large ovenproof skillet over medium heat.

In separate shallow bowls add the flour, eggs with a splash of water, and bread crumbs. Season the eggs with salt and pepper and mix well to combine.

Coat the chicken in flour, then egg, then bread crumbs. Add to the skillet and cook for about 5 minutes per side until golden brown.

Top the chicken with marinara, parmesan, and mozzarella. Bake for about 5 minutes until the cheese is melted.
