My absolute favorite way to use leftover pot roast is to make a quick and delicious sauce and serve over gnocchi. These ricotta gnocchi are super easy, but you can use store bought for a even quicker dinner.
Sometimes you just need a delicious pot roast. This roast is cooked low and slow with lots of red wine and vegetables. If you don’t love rutabagas like I do, throw in potatoes instead.
I love these quick and delicious black beans that are simmered with onion, garlic, cumin and bay. They’re my go for Chicken Enchiladas or with Steak Fajita Bowls - and the only time I don’t rinse canned beans.
This is such an easy and delicious meal one skillet meal. Tender chicken is tossed with a sauce that comes together simply with a kick of chipotle rolled in corn tortillas and topped with more sauce and cheese. So good!
If anyone tells you mashed cauliflower is just as good as mashed potatoes they are lying to you. This is a great mash up where the cauliflower adds to the flavor, but doesn’t take the place of a creamy potatoes.
If you’ve never had good cabbage before try this! Wedges of savoy cabbage are grilled to perfection and served with grilled sausage, pickles, mustard, and bread.
